"Dark chocolate is packed with antioxidant polyphenols that have the ability to stop free radical-mediated oxidation. This is great for the prevention of estrogen driven cancers! Although raw cacao is the most nutritious form it is great to know that a good portion of the nutritional benefit of chocolate is retained after processing. We don't want to eliminate too many of the health benefits by eating a product that contains a lot of sugar and chemicals. Choose chocolate with a cocoa/cacao percentage of about 70 or higher. Milk chocolate is not a good choice as it contains both pasteurised milk and large quantities of sugar, which will significantly reduce its health benefits. White chocolate is also high in sugar and contains no phytonutrients, so it is not a good choice either. A new study has found that our gut bacteria breaks down and ferments the components in dark chocolate, turning them into anti-inflammatory compounds that benefit your health. Also beneficial microbes including Bifidobacterium and lactic acid bacteria "feasted" on chocolate – this is great for maintaining a healthy gut microbiome".
